Camille’s Cooking: Honey Baked Chicken with Shallots

Chicken is a favorite for most of us, and it is one of our greatest main dishes. I am also sure that there are more recipes for chicken than any other ingredient in the vast culinary world.

I have developed many chicken recipes, and this is a very simple one that requires one pan and a quick clean up! I add shallots to this; they are akin to an onion but more mellow in flavor.

The shallots give the chicken a beautiful lift; it melts in your mouth as it combines with the honey and garlic flavors. As this recipe yields a nice combination of sweet and savory, the honey on top adds a succulent golden crust.

 

Vegetable oil

8 chicken thighs, skin on

Kosher salt and freshly ground black pepper

1 tablespoon garlic powder

2 shallots, sliced

2 tablespoons thyme, chopped

1 teaspoon parsley, chopped

1/8 teaspoon red pepper flakes

1/4 cup honey

 

Spread vegetable oil on bottom of baking dish and layer chicken pieces. Season generously with salt and pepper. Sprinkle garlic powder. Scatter shallots, thyme and parsley over chicken pieces.

Bake, uncovered, in a preheated oven at 350°F for 35 minutes. In a small bowl, mix red pepper flakes and honey. Brush honey mixture onto each piece of chicken. Place chicken under broiler for an additional few minutes, until skin is toasted golden.
