NEIGHBORS WHO MAKE A DIFFERENCE: Our unsung heroes

My person of the week is the hard-working Eileen Mayrose, a loving and dedicated woman that I have known most of my life. Eileen was raised in St. Anselm’s parish, and moved into St. Patrick’s, where she teamed up with her husband Artie to develop the largest and best sports program for kids in the community. She helped raise funds to build its Little League field, where she would often provide hot, cooked meals for the umpires and coaches. She also took the time to teach Irish step dancing free of charge to the children of the parish.

Eileen is devoted to helping the homebound in her co-op, when they need assistance with running errands, as she is very concerned for their safety. She is still a dynamo after all these years, and in spite of having raised four children, Edward, Lorie, Tom and Eileen. She now has 13 grandchildren to love. I am very happy that Eileen Mayrose is a neighbor who has made a difference in my life and so many others.

UNSUNG FOLK REMEDIES: Cilantro Pesto for detox of heavy metals

The following recipe for a tasty cilantro pesto packs a double punch. It is delicious on most foods, but it is also a folk remedy for too many metals in the body.

To detoxify your body, try this recipe: 4 cloves garlic, 1/3 cup Brazil nuts, 1/3 cup sunflower seeds, 1/3 cup pumpkin seeds, 2 cups fresh cilantro, 2/3 cup flaxseed oil, 4 tablespoons lemon juice, 2 tsp. dulse powder, sea salt to taste.

Blend cilantro and flaxseed oil. Add garlic, nuts and seeds, dulse and lemon juice, and blend into a paste. Add sea salt to taste and blend again. Store in dark glass jars.

Two teaspoons of this pesto daily for three weeks is said to help the body excrete mercury and other toxic metals in a short time. It can be frozen and will last almost a year.

Please consult your doctor if you have any health concerns, or are on any medication.
